Different Types of Starch
  • Tapioca Starch

    Tapioca starch is extracted from the root of the plant species Manihot esculenta, like cassava. It has small granule sizes and is flavorless, colorless, and odorless. It thickens soups when the soup temperature is high enough. Tapioca pearls made from tapioca are soft.

  • Potato Starch

    Potato starch is extracted from potatoes. Potato starch is a good soup thickener. It has larger granule sizes and is heavier and whiter, compared to tapioca starch.

  • Modified Starch

    Modified starch is prepared by treating the starch with chemicals to change its stability, texture, or gelatinization time. Some modified starch has similar characteristics as sweet potato starch but lacks the natural scent.

  • Mixed Starch

    Mixed starch is a combination of different types of starch.

    Sweet potato starch is extracted from sweet potatoes. Its viscosity makes it suitable for soup thickener. It has good adhesiveness. Pearls made from sweet potato starch are more chewy and tasty. The fried foods are crispier when sweet potato starch is used as coating.
